REY SILO BESOS
The BESOS de REY SILO is a lactic mini cheese weighing between 40 to 50 grams, cylindrical in shape with a natural Geotricum candidum rind. The refining process was developed in collaboration with the chefs from Casa Gerardo, Pedro, and Marcos Morán, and in its optimal development, it should tend to partially or totally liquefy (become cream). The production process of BESOS del REY SILO, like all the cheeses we produce in our cheese dairy, is completely artisanal.
Raw whole cow's milk is coagulated for 24 hours using small 200-liter vats, then molded with a ladle, and each piece of fresh cheese is individually salted.

Keep refrigerated. To enjoy this cheese at its best, consume within 25 days of opening. Once opened, we recommend wrapping the cheese in food paper and storing it in an airtight container in the refrigerator.
