REY SILO MÁXIMO

The MÁXIMO REY SILO is the largest version possible of the REY SILO BLANCO, weighing between 1.6 kilograms and 2.1 kilograms, and it has a cylindrical shape.

It is a lactic curd cheese like the REY SILO Blanco, and like it, it is artisanally made with raw whole cow's milk from a single dairy farm in Asturias. Matured in the underground cellar of the cheese dairy, with controlled temperature, humidity, and air renewal, its large size allows for a longer and more complex refinement process in which the lactic bacteria and the Geotricum mold on the rind contribute nuances that reveal the Asturian origin of this cheese.

This longer refinement translates into a longer preferred consumption period. It has an elegant and complex flavor profile with notes of dairy, grass, and flowers, and a long and persistent aftertaste of toasted hazelnuts.

Raw whole cow's milk, rennet, and salt.

Keep in a cool place. To enjoy this cheese at its best, consume within 30 days of opening. Once opened, we recommend wrapping the cheese in its food paper and storing it in an airtight container in the refrigerator.
