REY SILO AZUL MAMA MARISA

REY SILO Blue, MAMA MARISA is the first of the two blue cheeses that our creamery has developed in collaboration with chef José Andrés. Its name pays tribute to the chef's mother because she was the one who taught him to love Asturian blue cheeses as a child. When José Andrés' family moved to Catalonia, his mother used to prepare slices of apple topped with Asturian blue cheese for them, allowing their palates to travel to the green valleys of the Principality.

A large-format cheese, MAMA MARISA Blue weighs around 8 kilograms. Like all our cheeses, it is made with raw and whole cow's milk from a single Asturian farmer and crafted entirely by hand, incorporating several innovations in the curd-making process to achieve the desired maturation of the cheese.

In the maturation process of MAMA MARISA Blue, we have also introduced several innovations, following chef José Andrés' dream of bringing the coolness of the Asturian mountains into the cheese. For this purpose, we completely renovated the underground cellar of the creamery, designing a complex air conditioning system that replicates the optimal conditions of natural caves. This has allowed us to achieve a creamy blue cheese with elegant veins of Penicillium roquefortis. This REY SILO Blue is deep, balanced, with a velvety texture and mouthfeel resonating with flavors of forests and green meadows, ripe red fruits, and hints of marine fragrances.

Keep in a cool place. To enjoy this cheese at its best, consume it within 120 days after opening. Once opened, we recommend wrapping the cheese in food paper and storing it in an airtight container in the refrigerator.
